Since when these rich, fatty orange-yellow salted duck egg yolks become so HIP? I mean, we used to just have them simply within mooncakes, or matched with plain porridge.

Not anymore. A few years ago, Liu Sha Bao aka Golden Custard Buns were in the rage in Singapore. Then, we saw Salted Egg Yolk zhi char dishes gained popularity like Salted Egg prawns, sotong and crabs.

The trend has moved on to finding Salted Egg Yolk in toasts, lava cakes, waffles, xiao long bao. I will still say go easy on them, mind your cholesterol.

Salted Egg Yolk Xiao Long Bao
Well, do not expect the Xiao Long Bao to flow like a ‘liu sha bao’. The first reaction I got on the first bite of the orange-tinted Xiao Long Bao was, “Like the filling of a mooncake.” Or perhaps the inside of a ‘bak chang’.

The salted egg yolk with chunks of minced pork in thin dumpling skin still worked well in combination, though I wished there was more of the savoury broth.

Salted Egg Yolk Lava Cake
East meets west? The chocolate lava cake is once-upon-a-time the IT café food where diners get thrilled watching oozing molten chocolate out of a hot cake. Not so anymore.

Bring it a level up, add molten salted egg yolk inside. This comes in a dim sum basket (relevant, or pretentious), though would have preferred the dessert of a bigger size. Rich bitter-sweet chocolate and slight salted egg yolk is a new imperfect relationship which somehow works.

May May is sister restaurant to Blue Ginger Restaurant, drawing Asian elements in its creation of soon.

The Liu Sha Custard Doughnuts ($5++) was successfully soft and fluffy that left us craving for more. The thick gooey salted egg yolk custard that flows out so elegantly. A pity the sugar fairy decided to drop with more than a teeny weeny bit of sugar.

Black Egg Custard Buns
Sexy black oozing with smooth yellow custard. These Mini Black Charcoal Egg Custard Buns ($4.20++ for 3 pieces) with soft skin and oozing fillings are available on Min Jiang’s a la carte dim sum menu during lunch only; and occasionally on the Local High Tea Buffet (rotating menu) at Coffee Lounge from Fridays to Sundays, eve of and on Public Holidays ($39++ per adult, $19.50++ per child).

Salted Yolk Croissant
$7.50 for a Salted Yolk Croissant?

Taste-wise, the salted egg was thicker, more “gao” (heavy) and on the sweeter side, similar to that of a liu sha bao (lava custard bun). The fillings were generous, covered by crispy, buttery and flaky exterior. Surprisingly.

Singaporeans went on a frenzy over the croissant though, causing it to be sold out minutes after the shop opens.

Salted Egg Yolk Cream Puff
This dessert could be a hit, having a combination of some of our favourite fillings. A Menage A Trois ($19) – mini croquembouche tower of ‘Bo Luo’ Cream Puff filled With Salted Egg Yolk Creme Patisserie, whipped Orh Nee Paste and Black Sesame Soy Milk Bavarian bound by coconut caramel and adorned with desiccated coconut.

Salted Yolk Tart
My new found love, was the Peach & Salted Yolk Tart ($7.50) from Tart Blanc which contained slices of bruleed peaches sitting on top a sour cream coffee cake with a molten salted yolk filling.

Reminded me of a very good Hong Kong egg tart. Divine.

Liu Sha Donuts
These donuts hit my weak spot with Liu Sha Donuts ($6). The mini, not-too-sweet fluffy donuts are served in a box of 6, with a dipping sauce at the side made with salted egg yolk custard.

Salted Egg Yolk Crab Spaghetti
My guess is the Salted Egg Yolk Crab Spaghetti ($15) will easily become one of its best-seller.

The yellow creamy smooth-textured salted-egg yolk works beautifully with the deep fried soft shell crab, though overall I thought the pasta didn’t gel that well together.

Or at least everything tasted rather greasy as a whole. Perhaps some greens could help ease that greasiness.

Why do SMU students get all the good stuff?

Anyway, I love 7Kickstart – they are a fun bunch which introduces good coffee and experimental stuff. Their French Toast feels rather ‘Hong Kong’ style, with thick cut toast, egg yolk custard in the centre, drizzled with condensed milk. Better get your teammates to share lah.

Salted Egg Fries Salted Egg Fries should be a favourite with customers. The dip was kind of addictive, but I wished the fries were not that dry – think it was over-fried for a minute or two.

Salted Egg Sotong
Many calamari dishes tried elsewhere failed big time, usually tasting rubbery and overpowered by salted egg yolk sauce.

Diamond Kitchen’s Salted Egg Sotong ($14) was spot on – crispy deep fried, dusted with some spicy powder, evenly tossed in salted yolk mix, and did not taste overly chewy.

Salted Egg Korean Fried Chicken Wings
Since when Korean Fried Chicken Wings contain salted egg? Anyway…

There are three types of Korean Fried Chicken available – Yangnyeom (with gochujiang, garlic and rice syrup), Ganjang (soy sauce, garlic and mirin) and Salted Egg Chicken (salted egg yolk, evaporated milk, chilli and curry leaves).

I liked the Salted Egg Chicken flavoured ones best, possibly the least Korean of it all. While the sauces were at least tasty, the chicken lacked the juiciness and crackly crust which is the hallmark of good Korean fried chicken.

The Salted Egg Yolk Soft Shell Crab Slider ($12) used deep fried mantou which was quite soft and fluffy, though the soft shell crab used could be more substantial.

Salted Egg Yolk Ice Cream
Before all the salted egg yolk trend and local ice cream shops get more adventurous, Tom’s Palette has already been introduced the Salted Egg Yolk ice cream many years back (The shop has been around since 2005, re-inventing themselves in terms of bold flavours).

They call this the smooth savoury dessert, a harmonious blend of sweet and salty in a spoonful, which I would totally agree.

Siew Yoke with Salted Egg Yolk
Imagine some of your favourite roasts meats Roast Chicken, Char Siew and Crispy Pork Belly with creamy salted egg yolk dip.

The Siew Yoke worked best – incredibly crispy pork belly dipped with buttery salted egg yolk sauce which is of thick texture. While mustard was our previous preferred dip, we think we found a new favourite.

Only available during the Chinese New Year period. (Maybe if it gets popular enough, it will be a main-stayer.)
