The good news: Hill Street Tai Hwa Pork Noodles won a MICHELIN Star in the inaugural Singapore Michelin Guide. (The other hawker stall is Hong Kong Soya Sauce Chicken Rice and Noodle at Chinatown Food Complex.)
The bad news: Queues are likely to get even longer, and customers have been in lines anything from 30 minutes and beyond.
This means 1-2 hour queues won’t be impossible.
Singaporeans were initially surprised that their beloved Bak Chor Mee, BCM in short, had been left out in the Singapore Michelin Bib Gourmand Guide 2016.
Little did we expect to see it receiving one star, putting the humble coffeeshop stall in the same ranks as many fancy 1-star Michelin restaurants around the world.
This also makes Hill Street Tai Hwa Pork Noodles one of the cheapest Michelin meal you can get at SGD$5.
Owner Mr Tang Chay Seng was himself very surprised, and said he didn’t think that ang moh Michelin inspectors would know how to eat hawker food, and didn’t ever think he could get a star.
Hill Street Tai Hwa Pork Noodles is commonly known as the best Teochew style Bak Chor Mee aka minced pork noodles in Singapore. (There is a stall with a similar sounding name at Hong Lim Food Centre).
It was originally located at Hill Street in 1932, and is currently located at Crawford Lane (Lavender) with no other branches or franchises.
The last few times I went to queue, the wait was between 20 to 45 minutes or so. It was worth it, I thought. But I probably won’t do this very often.
Most customers I saw would go for the $10 bowl. Though I think the cheapest version of $5 is not that far off in terms of amount of ingredients.
Here’s the ‘magic’: Al dente springy noodles tossed in a savoury vinegary sauce, filled with tender pork and liver slices, minced pork, dumplings, and a sprinkling of fried sole fish.
The entire combination was full of ‘oomph’, firm bite of the noodles, the sauce robust with a mixture of tastes all in one bite. The pork and liver happened to be tender, cooked just right.
Most people are still in a state of surprise. Happy that their favourite local hawker stall is recognised by a prestigious food award, yet wishing that the queues in future won’t be that long.
The owner announced by the way, that he would not be increasing prices.
