Following a recent menu revamp, Cook & Brew perched at Level 33 of The Westin Singapore seemed to have gotten more adventurous with their food and bar offerings.
The gastro-bar is a popular venue to hangout for the working crowd in the vicinity, with its creative food offerings and extensive selection of craft beers, wines and cocktails.

You can choose to sit inside in air-con comfort rested on dark leather seats, or outside to enjoy the stunning view of the Marina Bay.
Here’s a tip if you are up for good deals. Head over there on Fridays for their FRIYAY! Specials for amazing drink offers such as house pour wines and beers at $10 nett, crafted cocktails from $12 nett, and bottle deals from $88++.
There will be a live band every Friday evening from 6pm onwards, which added to the chill-out vibes.
The singing was seriously not too bad… good to include some surprise dedications if you are thinking of doing so.

Food wise, you won’t get the predictable choices here.
Cook & Brew’s menu crafted by Executive Chef Aaron Foster and team, promises a mix of international favourites and Asian classics with a twist.
Think Lobster & Foie Gras Roll, Hawker Burger, Maple Miso Cod, Pad Thai Fries, The Chicken Parm, Korean Beef Carpaccio, and Caramel Butter Tart.

Pad Thai Fries ($15)
For the Thai food lovers. This delightful starter combines crispy sweet potato fries and the celebrated Thai street food Pad Thai.
The fries are topped with ingredients such as chicken, prawns, crushed peanuts, dried sakura shrimps, tossed with “Khun Por’s” Pad Thai sauce.
So what you get is a blend of sweet, saltiness and tanginess – different from other fries you have experienced before.
Warning: The saucy starter can get messy, so use utensils instead of your fingers.

Tornado Potato ($7)
I was surprised to find this South Korean street food here, and was my very first thing to order.
This deep fried spiral cut potato was served in threes for sharing, and were not as long as the typical ones.
What made this truly tasty was the drizzle of salted egg sauce. Do eat this piping hot.

Whipped Buffalo Milk Ricotta ($14)
Still remained as one of my favourite items on the menu.
What you get is a smooth buffalo milk ricotta with sweet pumpkin-like taste, with an unmistakable aroma of truffle cream. Spread it over grilled bread, and go ooh-la-la.

Crispy Fried Calamari ($13)
Deep fried squid rings with yogurt aioli. One of the safer (ie predictable) choices.

Pork Nuggets ($10)
Croquettes with fillings of juicy pulled pork, added with corn relish made with Chef Foster’s grandma’s home-recipe.

Hoisin Lime & Chilli Wings ($14)
Cook and Brew serves up 3 different types of wings – buffalo style Hot Wings ($14), Double Crispy Wings with blue cheese sauce ($14), but it was the Hoisin Lime & Chilli Wings ($14) which caught my attention.
These were sticky-saucy like Korean fried chicken wings, rich and tangy.

Crispy Pig Ears ($7)
Pigs’ ears? Yes. Suspend all worries you may have with this bar snack.
These silvers of pig ears were thinly sliced, fried to crisp, then peppered with paprika. Tasted somewhat like bacon, but with soft cartilage interior.
Tip: Dip them in to the garlic mayonnaise sauce.

Hawker Burger ($32)
A burger inspired by Chef Foster’s food adventures at the local hawker centres.
The layered fillings sound mega exciting and familiar – well-marinated sweet char siew-style pork jowl, crispy pork belly, served atop a juicy beef patty. All served with sambal mayonnaise, sliced green pickled chilies, and fries tossed in chili.
This reminded me of a marriage between a hearty American burger with Cantonese roast.

Nem Nướng Vietnamese Charcoal Grilled Pork Sausage ($16)
Xin chào! If you have have been to Vietnam, the grilled pork sausage “Nem Nướng” should be a familiar street food.
Chef gives his own take to one of his favourite Viet food, with spicy watermelon, cucumber, radish, mint, peanuts, and pickled carrot added to the homemade sausages. The smoking was done RIGHT at the table, for that added aroma and smoky flavours.

Black Truffle Fried Chicken ($32 for half bird, $59 for half bird)
Ah, fried chicken pieces with the scent of black truffle. I thought that the meat was slightly on the dry side, though saved by the orange ginger & lime pickle dipping sauce.

Singapore Style Fried Bee Hoon ($38)
I don’t think many would expect going to a hotel’s gastro-pub and order char bee hoon.
So glad I did. This plate had wok-hei! And the vermicelli was especially sumptuous after it absorbed the savoury sauce.
Add the ‘luxurious’ toppings of Nova Scotia lobster, char siew style pork jowl, pork belly, and mix them up with sambal chilli from extra oomph.

Not forgetting to end the meal with sweet treats of Strawberry Basil & Rhubarb ($15) – sweet basil cake with balsamic lime, strawberries and rhubarb jam; Chocolate Raspberry & Hazelnut Crunch Cake ($15) a flourless chocolate cake with hazelnuts and a scoop of chocolate guanaja sorbet, Anna Olson’s Steamed Carrot Cake ($14) and Molten Sticky Toffee Pudding ($14).
I like this revamped Cook & Menu, the food is more approachable yet unpredictable with a touch of fun, and many are great for sharing with friends. Certainly a suitable way to wind down to a relaxing weekend.
