Craving for Japanese hotpot? There are some cuisines that are great for gatherings or bonding sessions, and Shabu Shabu is one of them.
This dish is prepared by submerging thin slices of meat, vegetables and other ingredients into a pot of boiling water or dashi (broth).

What I like about Suki-Ya is that there is a healthy salad bar to pick your greens and other ingredients such as assorted meat and mushrooms balls and a variety of noodles; paper thin slices of chilled beef, pork and farmed chicken sent right to your table upon ordering.

To me, the most important element of a hotpot meal is THE SOUP. After all, it is where all the food are cooked in.
Surprisingly, I liked both the soup bases chosen – a rich, cloudy soy based Tonyu Miso, and deep-flavoured Black Garlic Soup. To assure you, I didn’t have thirsty pangs after the meal.

1. Choice Of 5 Soup Bases
There are 5 tasty types of soup bases to complement the meats, which includes Shabu-Shabu (the classic broth), Sukiyaki (a Japanese favourite), Tonyu Miso (Japanese miso and soy milk), Kimuchi (kimuchi with spicy miso) and Butaniku (rich pork based soup).
My personal favourite was the Tonyu Miso broth, a Japanese winter broth that combines both miso and soy milk. The milk gave the base a mild-flavoured but satisfyingly smooth broth.
While most diners would casually mix different meats into the same soup, I find that chicken, seafood, tofu, mushrooms, and vegetables complement best with the Tonyu Miso.
Another worthy mention is the Kimuchi base, for those who want to spice things up with a touch of tanginess. Simmered with authentic kimchi, spicy miso, and vegetables, this broth would go well with sliced pork and beef.

2. Seasonal Soup Base
Also look out for seasonal soup bases which changes from time to time. Till 31st July, the highlight special is the Black Garlic Soup.
Black garlic? You know some Tonkotsu ramen shops would add black garlic oil to their noodle soup. Yes, that taste is somewhat similar – smoky, caramelised flavour with depth.
The soup tasted very concentrated half-way through the meal, and I would recommend adding some greens to balance it off or have the friendly staff dilute the soup by adding hot water.

3. Quality Meats
As part of the buffet, Suki-Ya serves up an unlimited amount of thinly-sliced beef, chicken, and pork presented in boxes on the table.
The boxes of meats are kept refrigerated and only taken out upon ordering to ensure that they are chilled and fresh.

4. Assorted Meat and Mushroom Balls
Other than Lobster Balls, Shiitake Balls, and Cuttlefish Balls, the most popular ones are the Chicken Cheese Balls, Cheese Tofus and Salmon Roe Balls – be careful as hot melty cheese or salmon roe may just ooze out.
Hotpot Tip: These take only about 4 to 5 minutes to cook, transfer them to your bowl when the balls float on the surface.

5. Healthy Bar
I am the kind which goes for the greens, especially for a hotpot buffet. (actually vegetables are not cheap in Singapore).
The extensive Healthy Bar features a variety of vegetables and mushrooms (loved the enoki), to help balance off the meal.
Hotpot Tip: Depending on how crunchy or soft you like them to be, radish, potatoes and corn should be added before most vegetables as they take longer to cook, and this gives them time to absorb the flavour of the soup as well.

6. Dipping Sauces
There are a variety of sauces such as Ponzu, Spicy Peanut Sauce, Miso Tare, Mala Chilli, and Grated Radish, Grated Garlic, Spring Onions to choose from.
You can mix and match to create your very own dipping sauce – Be it Mala chilli with chopped spring onions, or just a raw egg with soy sauce and grated garlic.
Hotpot Tip: The citrusy ponzu sauce complements the seafood and white meat, while the thicker peanut sauce is best paired with beef and pork.

9. Free Flow Premium Top Ups at $10.90++ (per pax)
Suki-Ya has expanded their “Premium Top Up” range beyond Wagyu Beef with superior marbling and Iberico Pork, to include items such as Black Mussels, Half Shell Scallops and Salmon. (I think free flow salmon is a good deal.)
Hotpot Tip: The thinly sliced meats should be swished lightly from side to side in the broth just for a couple of seconds. Take it out of the soup (especially the beef) as soon as it changes colour, otherwise it will toughen up and end up being too dry.
