The Bird Southern Table And Bar – Crispy Fried Chicken Restaurant “Yardbird” Opens At MBS

I have waited for a long time for “The Bird” or “Yardbird” to arrive in Singapore. News stated its coming since about a year back, the hoarding up on The Shoppes at Marina Bay Sands for many months.

The Bird Southern Table And Bar by Restaurateur John Kunkel, is dedicated to classic Southern cooking and farm-fresh ingredient. It operates two outlets in Miami and Las Vegas.

The Singapore outpost is located near the Bread Street Kitchen side at Marina Bay Sands, with 2 levels of 190 seating capacity in total.

The restaurant was initially known as “Yardbird”, but changed its name to avoid clashing with the Hong Kong based Yardbird which will also be opening up in Singapore.

Of course the Southern style Lewellyn’s Fine Fried Chicken is the highlight, cooked with a 100-year old recipe. The chicken would be brined for 27 hours before mixed in a medley of spices such as paprika, cayenne pepper and garlic powder.

Items recommended on the menu include the Blue Plate Special ($18) of two pieces of fried chicken with chilled spiced watermelon and house-made buttermilk biscuit, Chicken ‘N’ Watermelon ‘N’ Waffles ($45), Buttermilk Biscuits ($10), and Shrimp ‘N’ Grits ($39).

I didn’t have much (stomach) space and asked for one recommendation – which was the Cool Ranch Cucumber Salad ($10).

Added with pickled sunburst onions and baby tomatoes, it made a refreshing, cooling start to a possibly ‘heaty’ meal.

The star of the meal, the Lewellyn’s Fine Fried Chicken arrived looking fine, but not as piping, steaming hot as expected.

The four pieces which made up half a chicken came with a lightly crisp, thin coat of batter. The focus was perhaps on the meat.

Not bad, not bad, quite juicy and tender.

There was a tiny level of disappointment. ”Is this it?”

The addition of spices was not that obvious, and overall didn’t have a life-changing effect on me. It was still a good plate of chicken, but I can just imagine some diners comparing this to what they could have gotten at another fast-food restaurant.

The waffle unfortunately was the let-down. Not as crisp on the outer layer as expected, but at least the pieces were fluffy.

The highlight though, was the bourbon maple syrup. The deep oak flavour of the bourbon complimented the sweetness of the maple.

I had friends who went on separate occasions who told me varying feedback from “best chicken” to “so so”. Perhaps The Bird is still getting a hang of things.
