800 Degrees Neapolitan Pizzeria – Oishii Customised Pizzas Made Within Minutes, At Shinjuku Tokyo

[Tokyo] Getting my customised pizza literally in minutes, just moments after I paid up at the cashier, was a surprising, unexpected experience.

800 Degrees Neapolitan Pizzeria located at NEWoMAN Shinjuku is the American pizza chain’s first outlet in Japan, and there are plans to open many more outlets all across Japan.

It was first opened in Los Angeles Westwood in 2012 by Chef Anthony Caron, and has since spread across the United States and internationally with outlets in Japan, Dubai and UAE.

I have decided to dine here after spotting a line of excited Japanese outside the restaurant, plus it is located right outside Shinjuku JR station. (Singaporean pastry chef Janice Wong’s shop is next door by the way).

The interior is an open plan kitchen setup, and you can see each step of the pizza preparation process from the start to the end.

Some of the signature dishes include Quattro Formaggi (¥1600), Magherita D.O.C. (¥2100), Capricciosa (¥1600), Spicy Meatball (¥1600).

Alternatively, diners may choose to create their own custom pizza with a large selection of toppings, starting from ¥980 (SGD$12.20) onwards.

The ordering system made me slightly nervous initially, as this was no ordinary pizza store. But I imagined it to be like Subway, and quickly did some pointing.

To create your own pizza, you first choose a base of Margherita, Verde, Bianca, Marinara, Creama, priced from ¥980 to ¥1,100 (SGD$12.20 to SGD$13.70).

Do not be surprised if you see the pizza base being kneaded right there ON THE SPOT. It doesn’t get any fresher than this.

The restaurant makes their pizzas using only the freshest ingredients including Italian tomatoes, Italian flour and fresh mozzarella flown in from California. There are over 40 different toppings.

You then select your add ons of vegetables (¥100); “Japanese original” (¥200) which includes Roseberry Pork, White Baite with Lemon, Marinated Artichoke, Broad Bean with Sakura Shrimp, and Nagaimo Yam; and Proteins (¥300).

It is easy to get over enthusiastic over selection, but I would recommend 3 to 4 ingredients, otherwise the amount of pizza toppings can get overwhelming.

Here’s the special part: The pizzas are cooked in an authentic Napoli style in a traditional wood kiln at 800 degrees Fahrenheit.

Your made-to-order pizza can be cooked and ready to be served in under 90 seconds from ordering. WOW.

The high temperate cooking created a soft and chewy base, and slightly charred and crisp edges. The toppings and dough did not taste undercooked at all. It was piping hot and delicious.

A quick note: The restaurant has a gluten free option but it is not suitable for customers allergic to wheat, due to the same kitchen and tools being used for the production of the gluten free option.

Ironically, the waiting times can be long during lunch and dinner hours due to backlog and long queues. So go during the off-peak period if you can afford to.
