A Noodle Story Hong Kong – “Singapore Ramen” Opening With Tian Tian Chicken Rice At Causeway Bay

Some of Singapore’s most popular “Michelin” hawker stalls, including A Noodle Story from Amoy Street Food Centre and Tian Tian Chicken Rice from Maxwell Food Centre will be opening up in Hong Kong.

The location is at the prominent Fashion Walk at Causeway Bay (銅鑼灣記利佐治街11-19號).

Gwern Khoo from A Noodle Story revealed that many have approached them in seeking a franchise, but he has previously turned them down due to quality control issues.

However, this particular overseas partner “… is different from the others, and very focused on quality.”

The Michelin Bib Gourmand stall is best known for its Singapore-style Ramen.

A bowl consists of tender cha-su, Hong Kong-style wontons, soy-flavoured hot spring egg, crispy potato-wrapped prawn, freshly sliced scallions and red pepper which sit neatly on top of the thin, springy noodles.

Other than that, they will also be selling Laksa and traditional Hokkien Street Prawn Noodles.

A R&D and main kitchen has been set up in Hong Kong to test out recipes and fine-tune things.

Even though this means that there will not be any revenue for the first few months as time is spent on hiring and training, they hope they are off to a good start with the quality control.

Other than A Noodle Story, other stalls to expect at the same space include Tian Tian Chicken Rice, 1950s Coffee and Toast from Chinatown and Lao Jie Fang Beef Brisket Noodles from Mei Ling Street Food Centre.

The Singapore Michelin-themed sit-down, full-service restaurant is anticipated to soft-launch end March.
