Alliance Seafood – Chilli Crabs And BBQ Sting Ray With Michelin Bib Gourmand, At Newton Food Centre

One of the surprising names that appeared in the Singapore Michelin Bib Gourmand is Alliance Seafood found at Stall 27 Newton Hawker Centre.

Can’t deny that it is a more established name within the food centre itself, with more than 30 years in operation. But somehow, it is not THAT in the radar for zhi char and seafood lovers.

Maybe it is Newton Food Centre, often seen by the locals as an eating destination catered to the tourists.

Previously, there were more complaints on touting and occasional over-charging, but has been reduced greatly after the revamp.

The environment seemd more pleasant as well.

For tourists, do not worry. Just find seats, remember the table number, and make your orders.

Alliance Seafood offer crab sets for the convenience: Chilli Crabs Set ($65) which also includes Cereal Prawns, Fried Rice and Man Tou (buns to dip in to the sauce); Black Pepper Crab Set ($65); and a set of two type of crabs ($100).

I couldn’t find enough kakis (friends) who want to dine out at Newton, and so stuck to their other food items.

Other than BBQ Crayfish, Lobsters, Tiger Prawns, the more regular dishes were Sting Ray ($12, $15, $20), Calamari ($15, $20, $25), Kangkong Vegetables ($8, $10, $12), Lemon Chicken ($15, $20, $25), Sweet & Sour Chicken ($15, $20, $25), Squid ($12, $15, $20) and Fried Baby Squid ($15, $20, $25).

The quintessential food to have at Newton Food Centre – the Sting Ray ($12) came as small slab of
barbecued piece topped with sambal chilli served on banana leaf.

Good for two to share (or one if this is the only thing you are having), the flesh was fresh and tender and pulled apart easily.

The sambal chilli felt only mildly spicy compared to more fiery versions I had elsewhere, and was perhaps tamed down to suit the palates of foreign visitors in Singapore.

Several of the dishes were considered not-bad and somehow not as greasy as I imagined it to be.

The Fried Rice for example, was fragrant but not as flavoursome with basic ingredients of eggs, prawns and bits of French green beans. Though I had the feeling it was done of purpose to cater to the more international taste-buds.

I won’t mind having Alliance Seafood again, but which it had perhaps one or two more standout dishes to differentiate from the rest. Also because I am expecting more since it is on the Bib Gourmand.
