[Hong Kong] Much fanfare was buzzing with the opening of yet another Vietnamese restaurant in the city.
The brainchild of Chua Lam 蔡瀾, renowned TV host, food critic and writer; it comes as no surprise that he decides to open a Vietnamese-themed restaurant as his first foray into the F&B business. (Will Wong Ah Yoke open a ramen shop one day?)
Word has it that the celebrity food critic has been a big fan of Melbourne’s Vietnamese eatery, Pho Dzung, and inherited the recipes from its owner who is also a friend.
Queues started forming at Wellington Street since opening days outside this 2-level restaurant.
With 3 separate kitchens serving up freshly made pho made from a specific bone to broth ratio, the rice noodles are made fresh in-house from the milling, to steaming the rice sheets and cutting of the noodles.
I tried their Beef Pho with Raw Beef and Shank (HKD68, SGD11.90).
The broth leaned towards the sweeter side, and the noodles were a little thicker unlike the usual store-bought rice noodles due to the fact that the noodles are made fresh.
I appreciate establishments that make their ingredients from scratch rather than using commercialized ingredients and it is rare to find many places like that these days. Apparently extra noodles are available for free refills.
The Stir-fried Morning Glory with Shrimp Paste (HKD48, SGD8.40) was average but considerably tastier compared to many other similar establishments here.
The Fried Spring Rolls (HKD48, SGD8.40) were nothing to shout about, and felt like it needed some glass noodles inside to balance out the heaviness.
Perhaps a nice greasy appetizer to add on with a bowl of clear noodles but not a must-order.
Even months after opening, the crowd is still going strong.
It seems like Hong Kong clearly has an appetite for light broth noodles and Vietnamese-themed restaurants. And the wallet-friendly prices don’t hurt either.
I’m not sure I would say this is the best pho in Hong Kong but it’s certainly a nice bowl of broth on those cold winter Hong Kong days.
