Modern Asian Interpretations At The Capitol Kempinski Hotel Singapore
15 Stamford by Alvin Leung is conceptualised by the maverick celebrity chef Alvin Leung, unveiled at The Capitol Kempinski Hotel Singapore.

Known for his 3 Michelin-starred restaurant Bo Innovation in Hong Kong and creative spin on food, Chef Alvin Leung positions 15 Stamford as a venue where he serves his take on Southeast Asian food while maintaining its flavours and DNA.

What you can expect include Singapore Chilli Crab inspired dish of Whole Alaskan King Crab in Chilli Crab Sauce and served with Cornbread; Whole Boston Lobster with Mangosteen, Tomato and Spicy Thai Dressing; and Hokkaido Scallop with Adobo Butter and Ginger which pays tribute to the iconic Filipino dish Adobo.

Another highlight is the Chargrilled “Bak Kut Teh” Pork Chop with Compressed Watermelon, Angelica, Barbecue Sauce ($38), with large slab of bone-in pork chop is marinated over 8 Bak Kut Teh herbal spices for 12 hours, and chargrilled until tender.

Under-The-Radar Modern European Restaurant At Orchard Road
Cosmo Restaurant & Wine Bar is an understated new establishment located at Forum The Shopping Mall, where California Pizza Kitchen used to be.

It offers a modern European take on classic cosmopolitan dishes using premium ingredients to create culinary indulgences.

Not to be outdone in its offerings, the trendy wine bar boasts a stellar line up of over 70 wines, plus beers and spirits.

The recommended dish is the Beignets de Crabe ($20). These appetizing crab cakes are handmade with an array of Mediterranean flavours, shaped and pan-fried until crisp.

Another special highlight which I discovered after re-visiting was the Chef’s “Omakase”, priced at a super wallet-friendly $38++ only.

The 5-course meal for me includes tasting portions of Foie Gras, Porcini Cappuccino, Sous Vide “Chicken”, Joue De Boeuf, and Dessert of the Day – which was Crème Brulee made in-house. Note: Items rotate regularly.

Relish by Chef Willin Low Opens In The CBD
While Wild Rocket may have closed, celebrity Chef Willin Low has opened a outlet of Relish in the CBD at Frasers Tower (opposite Amoy Street Food Centre).

You can expect burgers such as the Wild Rocket Beef Burger ($15.20), Bacon and Cheese Beef Burger ($15.90), Mushroom & Double Cheese ($15.40) and Seafood Burger ($16.80).

Expect to find some Wild Rocket favourites appearing, costing less than before, such as Laksa Pesto Linguine ($17.80) and Hae Bee Hiam Spaghettini ($17.80).

The one dish that appears to be popular is the Krapow Bee Tai Mak ($13.80) – Thai inspired bowl of basil minced chicken topped with wobbly egg, on a bed of “short rice noodles”.

Brand NEW Outlet With Korean Sandwiches, Budaejjigae, Waterfall Cheese Steak
If you have walked past Level 1 of 313@somerset, you would have noticed the bustling new restaurant of NY Night Market at the prominent corner.

Friends have asked what type of food it presents, though it is hard to pin-point as It serves a colourful smorgasbord of cuisines from Korean fusion to Tex-Mex and Vietnamese cuisines.

You get an expansive array of finger foods, fried chicken, pastas, pizzas, stews served bubbling over an open flame, and of course, sandwiches made Korean-style.

Get the All-in ($33.90). They’re not kidding when they named this dish as such.

The “All-in” features two parts. The first is an array of grilled meats and seafood – beef, pork, chicken, and shrimp, with… you know it… more cheese.

The second board offers indulgence creamy macaroni & cheese, garlic tortilla, warm bread rolls, fresh salad, coleslaw, and even a selection of dips. The tortilla and bread rolls are for you to wrap the meat from the other board within. NY Night Market (313@somerset)

COCA Restaurant has opened a brand-new outlet at Suntec City Level 2.

I must say the revamp has been done up quite spot-on, with contemporary-clean décor – marbled table with furniture in shades of midnight blue, with a touch of elegance.

Apart from the usual hotpot fare, the restaurant offers scrumptious House Specialties, such as the original Fish Glue, Fortune Fish Paste, Shrimp Wantons, and more.

In addition, COCA Restaurant now serves its hotpot in a Quadruple Pot which allows you to choose 4 soup bases.

There are also now 7 enticing COCA broths to look forward to, from Hua Diao Phoenix which would ignite your love for hotpot, to Over The Top Coriander – the first of its kind in Singapore. COCA Restaurant (Suntec City)

Famous Wanton Mee Stall Opens Full-Fledged Eatery
When Hong Lim Food Centre was closed for renovations, I knew what withdrawal symptoms were like, UNTIL I found out that Ji Ji Wanton Noodle Specialist 基记面家 has opened their full-fledged eatery at Kreta Ayer Road.

I genuinely feel happy for the family.

The Ji Ji Signature Char Siew Wanton Noodle continue to be the best-selling noodle item, and it is priced at an affordable $4.80 – considering this is an air-conditioned space.

However, customers can opt for bigger bowls at $6.80 and $8.80 respectively.

Other noodle offerings include Dumpling Noodles, Braised Soya Sauce Chicken Noodles, Chicken Cutlet Noodles, Braised Chicken Feet Noodles, Mom’s Curry Chicken Noodles, Shredded Chicken and Ipoh Hor Fun. Ji Ji Wanton Noodle Specialist 基记面家 (Kreta Ayer)

Hototogisu Ramen – Great World City

Michelin-Starred Ramen From Tokyo, Offering Unique Oyster Ramen
Hototogisu Ramen it is one of the first restaurants to open at the new wing of the revamped Great World City.

Its parent shop – Sobahouse Kiniro Hototogisu 金色不如帰 from Tokyo was just awarded a Michelin Star in the Tokyo Michelin Guide.

What distinguishes the Great World City outlet is the introduction of “Oyster Ramen”, exclusive to this branch.

There are two versions for this – the clear soup based Oyster Shio Ramen ($15.90) and Oyster Paitan Ramen ($15.90) with creamier broth.

The broth is said to be prepared by slow-cooking oyster consommé at a lower temperature for a number of hours, then added with roasted paprika for a more invigorating base. Hototogisu Ramen (Great World City)

Hokkaido Paradise At Revamped Changi Airport T3 Outlet
The revamped Ramen Champion comes with a brand-new Hokkaido Paradise concept and section, dishing out Hokkaido-themed dishes at Changi Airport Terminal 3 basement 2.

The Hokkaido highlights include a Mt Fuji-Yotei inspired Stamina Miso Ramen, Ishikari Nabe Ramen, Seafood Donburi, Hokkaido Curry dishes, and exciting desserts of Hojicha Kakigori and Matcha Brûlée Toast.

This Japanese dessert, Kakigori, is made with soft and fluffy shave iced, flavoured with syrup and a sweeter, often condensed milk.

At Ramen Champion, they offer kakigori is 4 flavours: Hojicha, Royal Milk Tea, Strawberry and Milo.

The Hojicha Kakigori ($12.80) and the Royal Milk Tea Kakigori both comes with grass jelly, mochi, fresh whipped cream, and either hojicha or royal milk tea ice. Ramen Champion (Changi Airport T3)

Minimalist Craft Beer Bar With Tom Yum Gyoza And Chicken & Waffles Bites
While you could imagine a craft beef bar that is full of colours, purplish-pink neon lights or with dim lighting, Almost Famous takes on a ‘simplistic’ almost monochromatic approach.

It felt both futuristic-chic yet a sense of urban-loneliness, depending on your perspective and mood.

In terms of craft beers, there is a selection of 16 rotational beers on tap from up-and-coming local and overseas breweries.

The food menu is kept rather lean, with bar bite offerings of Chicken & Waffles ($14), Poutine ($10), Crispy Kai Lan ($8), Tom Yum Gyoza ($10), Encierro Garlic Wings ($14), Onion Churros ($10) and A.Famous Duck ($10). Almost Famous (CHIJMES)
