Popular Har Cheong Gai stall from Yishun Park Hawker Centre has finally opened a more centralised and accessible second outlet within Maxwell Food Centre.
The stall is located along the same row as famous Michelin Bib Gourmand recipient Tian Tian Chicken Rice (which is probably Singapore’s most famous chicken rice stall).
Similar to their stall in Yishun, Ah Tan Wings can be easily spotted from far with their huge, hipster neon-lights which states “AH TAN”.
This is especially useful to stand out among all the stalls, and for busy office people stuck to mobile phones to notice it.
Offering only Har Cheong Gai aka Prawn Paste Chicken on its menu, there are 3 set meals available.
The popular choice will be Set A called “Wing Wing” ($5.20) served with rice, 2 shrimp paste wings and a sunny-side up.
For a bigger and more substantial meal, the Set B of “Atas Cutlet” ($6.80) comes with a Shrimp Paste cutlet instead of wings, served with rice and a sunny-side up.
The basic will be Set C ($3.50) served with rice and one shrimp paste wing.
Note that one Shrimp Paste Wing consists of one wing and one drumlet (ie. 2 pieces of Har Cheong Gai).
This is also available as an ala carte order at an additional $1.80, but with a minimum of 2 Shrimp Paste Wings per order.
The highlight is definitely the crispy, golden-brown and fragrant (some call it pungent) wings, said to be marinated for at least 2 days for the flavours to be absorbed entirely into the meat.
In addition, the wings are deep-fried twice, each time with a different batter to create a different texture.
A crispy layer is formed during the first fry whereas extra-crunchiness is added to the outer layer during the second fry.
I will prefer the wings to the drumlets as the latter were slightly too dry.
However, the smell from the Shrimp Paste Wings is not too overwhelming, yet the flavours are distinctive and satisfying.
Coupled with fragrant chicken rice coated with garlic and fried shallots and the usual Hainanese Chicken Rice chili with a spicy and tangy taste on its side for a complete and flavourful meal.
