Patisserie Sadaharu AOKI paris – Those Famous Macarons From Japan

[Tokyo, Japan] In France there is Laduree and Pierre Herme, in Japan there is Sadaharu Aoki. (Though not forgetting in Australia, we have Adriano Zumbo.)

These are the names who excel in making macarons. Sadaharu Aoki made quite big waves in the patisserie world, for being a Japanese Chef who incorporates Japanese influences and ingredients into French-style pastries with astonishing elegance in aesthetics.

Him being a matcha and black sesame maverick, Sadaharu Aoki’s macarons have been requested by ANA for their business class flights departing for Paris. The boutique in Marunouchi Tokyo is quite sought-after for their demisecs and bonbons chocolat too.

A Degustation Set (1600 yen, SGD$17.30) would be the best choice if you would like to sample creations in bite sizes.

There were 6 slices of cakes on the plate, including some signatures – the Macha Azuki, Chocolate Pralin, Valencia and Cheese Cake Citronne. Cakes cost between 680 and 830 Yen (SGD$7.35 – $9) if purchased per slice.

Macaron-wise, I am still a fan of PH who manages to incorporate and balance different flavours together. AOKI’s macaron boosted light crumbly biscuit with slight chewiness, though I wished for more fillings of the ganache.

The cakes are were mastery in aesthetics, and extremely precise. Intricately layered with different components, some pieces came with addition of feuilletine for that added delicate texture, but the sponge layers could have been more moist.

Perhaps because we were taking the sampler set, and cakes were cut into pieces, they tend to lose their moisture easier.

Japanese pastries generally avoid being overly sweet and heavy, which is to my preference. Quite the cake heaven for many Japanese.
