If you are looking to feast, Hilton Singapore has been updated with a new Sunday Champagne Brunch, looking set to satisfy diners with a wide buffet spread and eight interactive cooking stations.

The inclusion of the Sunday Brunch is upon the request of diners, and the highlights are truly the grill, meat carving and seafood stations.

Even though you will be ‘greeted’ with desserts right at the entrance, walk till the end of the restaurant and you would know why.

There will be a group of chefs behind the grill pod, searing sizzling prime cuts of meat over white-hot coal; and you can watch the tantalizing meats cooked a la minute, getting a whiff of smoky aroma.

Here are some of the highlights of the Sunday Champagne Brunch at Hilton Singapore:

Tantalising Grilled Meats
If you are a fan of grilled meats, you can get all your money’s worth right at this station alone.

Cuts of wagyu flank steaks, lamb chops, Rangers Valley grain-fed beef tenderloin, Australian grain-fed prime rib, honey mustard-glazed pork rack and slow-frilled herb-roasted baby fowl… with tasty depth of flavours.

The US Prime Rib I had was satisfyingly tender and rich, without needing any additional sauces to lift the flavours.

“Live” Fresh Seafood
I don’t see Yabbies often enough at buffet restaurants here, so am surprised to see some. Other than that, you will find a range of Canadian-Maine Lobsters, thick sashimi slices, half shell scallops from Australia and live-shucked oysters from Australia, Canada and France.

Comforting Savoury Casseroles
Perhaps my 2nd favourite station for serving hearty (maybe healthy) warm comforting casserole dishes. While you are waiting for meats to be grilled, you can fill up your plate with sides of US Asparagus Au Gratin, Caramelised Pumpkin and Grilled Baby Vegetables.

Smorgasbord Of Cold Meats
Contains thinly sliced a la minute charcuterie of imported whole leg Iberico ham, Lomo Ham, Saucisson sec (thick, dry cured sausage) and cured meat.

All About Cheese
More than 20 types of cheese specially flown in from Italy, France and Switzerland.

Thin Crust Pizzas
Crispy homemade thin crust pizza with favorite toppings from parma ham to seafood.

Homemade Italian Pasta
Right next to the pizza station is a live cooking pasta station, where you can get some al dente homemade Italian Maccheroni (macaroni) Pasta cooked with Yabbies from Spain and Basil.

Specialty Dishes
Other than the cooked food items, I was also pleasantly surprised to see some different specialty dishes not commonly found in buffet restaurants – Pan-fried Foie Gras with Apple and Passion Fruit, and Scotch Egg with Black Truffle Hollandaise.

Decadent Desserts
Desserts are definitely a strength of the Hilton Singapore Sunday Champagne Brunch, and the range is quite extensive and colourful – from Caramel Hazelnut Chocolate Fountain, Rainbow Cake, Crème Brulee, Green Tea Strawberry Tarts, Macarons, Pralines to Homemade Gelato.

My personal favourites during my meal were the Cassis Caramel (smooth mousse with subtle touches of blackcurrant) and Mango Jasmine Cakes (light and not too sweet).

In addition, every diner will also get a welcome drink. Consider spending your Sundays for a bubbly Sunday brunch with Australian grilled prime meats, living cooking stations and fresh seafood. Not forgetting the desserts.
