It’s Cake Time! 9 Must Have Tea-Inspired Cakes From 9 Popular Local Bakeries

It’s Cake Time: Brew&Bake is probably the first time that 9 local bakeries, all familiar names, have come together to collaborate on this cake campaign to create their own take on a floral tea inspired cake

You will find your local favourites: Baker & Cook, Bakery Cuisine, Barcook, D’Pastriez by Bread Fresh, Dora Keiki, Mugiya, Rive Gauche, Swee Heng, and Swissbake, each offering an exclusively made cake available for a limited period.

Interestingly, both artisanal shops and heartland bakeries have come together for this.

Here’s the brief: They have all created tea-inspired cakes, made with quality ingredients namely New Zealand’s premium dairy brand, Anchor, for that full, creamy flavour.

Each six-inch cake is priced from $28 and available for purchase only from 1 November to 31 December 2017 (good for your Christmas and year-end parties too).

Baker and Cook
Gluten Free Orange and Lavender Tea Cake

Locations: Bugis InterContinental Singapore, Chip Bee Gardens 44 Jalan Merah Saga, Clementi Arcade 41 Sunset Way, 77 Hillcrest Road, Holiday Inn Express Clarke Quay, 64 Namly Place, Swan Lake Avenue

Talk about Baker and Cook by Dean Brettschneider, I have always enjoyed its rustic-tasting Carrot Cake and Zesty Lemon & Thyme Pound Cake. It is no surprise that I was keen on this Gluten Free Orange and Lavender Tea Cake.

The sponge layers were wonderfully damp and dense, even though I have refrigerated it for a while. Flavours of the lavender tea-infused crumbs came through quite strongly as well.

Layered with cream cheese and tart house-made marmalade, the slice didn’t feel overly rich, light enough for a teatime dessert.

Apple Rose Cake

Locations: Changi Airport T2, Changi Airport T4, Innovis (Fusionopolis), NTU North Spine Plaza, Rivervale Mall, Tanjong Pagar Xchange

This is a good-looker (Mums would like this?).

Neatly arranged on the ring-shaped cake, are pretty pink circles of thinly cut raspberry-soaked apple crisps.

Beneath the rose-flavoured sponge was soft cream frosting, which was certainly custardy-soft on the mouthfeel.

The tea element comes in the form of rose tea and infused raspberries, lending the dessert sweet floral flavours within.

Barcook
Rose Lychee Cake

Locations: Alexandra Retail Centre, Clarke Quay Central, Hong Lim Complex, International Plaza, Novena Square 2, OG Albert Complex

Mention “rose” and “lychee” together, and I think you can imagine how this cake would be like.

Some of my friends think it was very ‘girly’, though I reckon the boys would appreciate the fragrant blend as well.

The cake combines delicate almond-flavoured sponge with white chocolate mousse, crisp sable at the bottom for a party of textures.

You would notice also alternating sections of lovely pink in between, which are rose tea infused crème brûlée. Sweet and light.

Dora Keiki
Strawberry Rose Cake

Locations: E!Avenue Downtown East, Esplanade Xchange, One@KentRidge, One Raffles Place, Woodlands Xchange

Dora Keiki is best known for its Dorayakis and other Japanese-styled cakes.

For this particular offering, the fragrance of the rose tea infused sponge pairs delightfully with the pureed strawberry bits.

I did wish that the rose element could have been more pronounced, but perhaps they wanted to keep the overall taste and texture on the lighter side.

D’Pastriez by Bread Fresh
Osmanthus Onde Onde Cake

Locations: Fusionopolis One, Telok Blangah Crescent Blk 9, Ang Mo Kio Ave 4 Blk 629, Bangkit Road Blk 257, Fajar Road Blk 445, Gek Poh Shopping Centre, Ghim Moh Road Blk 19, Yishun Ring Road Blk 103, Bukit Batok St 31 Blk 376

Oh, this was a surprise.

I would not have expected beneath the glossy (almost mirror-like) cake glaze, was the local favourite of Onde Onde (flavour).

There are three layers to this dessert. The exterior has a cooling osmanthus jelly, the main portion onde onde inspired cream, with a base comprising of caramelised roasted coconut sablé.

The familiar yet out-of-the-expected combination of pandan and coconut should make this a family favourite.

Mugiya
Jasmine Tea Mousse Cake

Locations: City Square Mall, Hilion Mall, NTUC Hougang Mall, Hougang Point, NEX, Singapore Post Centre, V Hotel @ Lavender, Westgate Mall

I have noticed Mugiya (at Kitchener Road City Square Mall) for its breads, and recently found out about the cake offerings which incorporates Japanese culinary elements.

There is a lot going on in this cake, from jasmine tea infused cream, bittersweet chocolate sponge, sweet white chocolate-coated rice krispies, added with bits of mango and passionfruit.

Rive Gauche
Osmanthus Lychee Mousse

Locations: CityLink Mall, I12 Katong, Jurong Point, NEX, Plaza Singapura, Suntec City Mall, Takashimaya, Tampines One, VivoCity

Osmanthus jelly, otherwise known as “gui hua gao”, was introduced in some mid to higher-end Chinese restaurants as a form of delicate dessert.

This cake includes a top tier of osmanthus jelly, and smooth wobbly lychee mousse in the middle, added with crunch from sweet lychee bits. Has a Japanese cake-like delicate finish.

Swee Heng
Lavender Earl Grey

Several Locations, including 888 Plaza, Boon Lay Shopping Centre, Bukit Batok St 31 Blk 372, Bukit Panjang Plaza, Jurong Point, Compassvale Drive, NUH Main Building, Clementi Mall, The Arcade at Collyer Quay, Tampines Hub

Swee Heng is a familiar name amongst the locals, known for its freshly baked breads and cakes since 1989. That is almost 30 years.

Earl Grey tea is one of the most popular black teas around the world. Its citrusy hint of bergamot naturally lends itself to flavouring cakes, including this. The lavender tea-infused cream frosting makes an aromatic complement.

The sponge is made of milk chocolate and vanilla sponge, with cocoa bits for added crunch.

Marigold Secreto

This is one for the chocolate cake lovers, and this Marigold Secreto shouldn’t disappoint.

Both luscious and moist, you can also savour the lightness of marigold tea-flavoured sponge which helps balance the cake out.

There is also subtle fragrance of Alphonso mangoes, which should make this gorgeous cake a crowd-pleaser.
