Ash & Elm – NEW Sunday Champagne Brunch Inspired By Spring, At InterContinental Singapore

There may be many Sunday Champagne Brunches in Singapore, but Ash & Elm at InterContinental Singapore stands out with its refreshed Spring-inspired brunch menu.

Three iconic tasting platters comprising petit plates feature the freshest produce of Spring to take your palate around the world with ingredients such as Belgian endives and American green peas.

After the recent few months of festive eating with rich and heavy foods, the new menu – designed by Executive Sous Chef Philippe Duc (formerly from Michelin-starred SPOON by Alain Ducasse at InterContinental Hong Kong) – is a refreshing change that does not compromise on taste.

The Spring-themed dishes are categorized into three iconic tasting platters – From The Land, From The Sea, and From The Garden.

Select your favourites from the nine delectable dishes, or better yet, order them all and sit back as the kitchen prepares them à la minute.

You do not have to lift a finger – these small plates forming platters will be served right to your table.

From the Land: Pan-fried Duck Foie Gras on Toasted Brioche with Spiced Rhubarb Sauce
Highly recommended if buttery foie gras is your thing, especially when you can have unlimited servings.

Seared upon order, the delicate, crispy outer layer of the duck foie gras gave way to a rich, creamy texture that was well-balanced with tangy rhubarb sauce.

From the Land: Grilled Chicken, French Beans, Persillade Sauce
Sweet French beans and 30-day corn-fed grilled chicken with parsley-garlic sauce.

The selection of seafood dishes did not disappoint.

Plump Hokkaido scallops were seared with butter to result in a golden crust and succulent meat, and topped with crisp broccoli and croutons.

From the Sea: Grilled Prawns and Squid with Sautéed Spinach in Crustacean Sauce
Another hot favourite from the menu was this grilled seafood dish.

The prawn was sweet and squid well-cooked, but the star of the show was the sautéed spinach that absorbed the moreish, savoury crustacean sauce, ensuring a burst of flavor.

From the Sea: Steamed Atlantic Cod, Asparagus, Taggiasca Olive Sauce
Tender cod with earthy flavours of asparagus paired with piquant olive sauce.

From the Garden: Gratinated Braised Endive with Black Truffle and Comté Cheese
Truffle lovers rejoice. Enjoy a serving of piquant endive topped with lashings of black truffle and comté cheese (French cheese made from unpasteurized cow’s milk) that was baked to reveal a crisp, golden crust.

From The Garden: Ravioles du Royans with Zucchini and Basil Pesto
There was something heartwarming about home-made ravioli, and these plump ones were filled with flavourful comté cheese, and garnished with garlic and parsley for a refreshing uplift that balanced the cream sauce.

From The Garden: Basil Risotto, Mushrooms, Parmesan, Parsley
Aromatic basil uplifted this creamy dish that was enhanced with umami-rich mushrooms and generous shavings of Parmesan.

The restaurant comprises three exciting culinary theatres: the charcuterie and cheese room, wood-fired oven, and charcoal-grill kitchen that creates its signature mouth-watering Roast Beef and Iberico Pork Chops.

I was greeted by the delightful selection of premium seafood on ice upon entering the restaurant, complete with Boston lobsters, French oysters, and yabbies, among others.

Another star of the buffet showcase is the unlimited Caviar Bar comprising five varieties of luscious orbs – almost too good to be true!

While you are at it, do not forget to make a stop at the Charcuterie and Cheese Room – a galore of 12 selections of cheese such as aged comte from France and Swiss emmental and gruyere, alongside charcuterie including house-cured beef pastrami, and air-dried pork belly.

Other highlights include the succulent Roasted Beef, Slow-Baked Fish, and Eggs Benedict. Not forgetting the cakes, gelato and desserts.
