Royal Treasure Bowl (Pen Cai) (Individual Item Order: $288+ for 6 persons, $388+ for 10 persons)
A staple for the auspicious season, Pen Cai (poon choy in Cantonese, which means “basin dish”) is essentially a pot full of decadent Chinese New Year delicacies like braised dried seafood, roasted meats, and stewed vegetables in a rich and thick sauce and stock-based gravy.
TungLok Group’s Pen Cai consists of layers of fresh seafood, meats, and selected festive delicacies stewed in a superior abalone sauce.
The Royal Treasure Bowl is filled with an abundance of 13 savoury ingredients: 10-head Abalone, Sea Cucumber, Dried Oyster, Pork Shank, Shiitake Mushroom, ‘Bai Ling’ Mushroom, Fresh Scallop, Live Prawn, Bean Dough, Smoked Duck Breast, Lotus Root, Black Moss, and Chinese Cabbage.
Generally, I find some Pen Cai leans towards the saltier side, but the abalone sauce used is actually palatable on its own, but best consumed with a hot steaming bowl of rice.
For a more premium option, there is the Heavenly Treasure Bowl 金装聚宝盆菜 ($388+ for 6 pax, $588+ for 10 pax portion) which consists of 16 quality ingredients including a 6-head Abalone, Fish Maw and Sea Cucumber.

Chinese New Year isn’t complete without the iconic Yu Sheng, a timeless must-have piece of edible art.

A simple yet equally important part of your take-home feast is the Fried Glutinous Rice with Assorted Preserved Meat.
Adding a layer of aroma and visual appeal is the giant lotus leaf wrapping of this rice dish.
It features glutinous rice that’s fragrant, sticky and chewy, stir-fried with flavourful waxed meats and umami-rich mushrooms.
The soft texture of the rice is a wonderful contrast to slightly firm textures of the lup cheong and mushroom.

TungLok Nian Gao (Individual Item Order: $22+ for Traditional / Panda / Black Sesame, $28+ for Red Dates Nian Gao)
Made with the finest glutinous rice flour and palm sugar, TungLok Nian Gao comes is four special flavours for the whole family: Traditional, Pandan, Black Sesame, and Red Dates.
It is the first Nian Gao in Singapore to be recognised by the Health Promotion Board (HPB) for its low sugar content and as a source of dietary fibre.
A favourite is the Pandan, with a light fragrance, mildly sticky texture, and not overly sweet. It is recommended to pan-fry the Nian Gao with eggs so that the outer layer is nice and crisp.

Roast Suckling Pig stuffed with Glutinous Rice ($298++ for Whole, only available at Orchard Rendezvous Hotel, advance order required)
Aside from the required culinary skills, there is an art in preparing a perfectly roasted suckling pig.
It begins with a thorough cleaning of the suckling pig inside out, and continues to a slow marinating process to ensure the flavours of the marinade are spread evenly.
Once the meat has soaked up the marinade, the pig’s belly is filled with fluffy, fragrant glutinous rice.
The stuffed suckling pig is then roasted over flames until the meat is cooked and the skin turns crisp golden brown. The precise timing and control of heat from the flames is crucial as it determines how crunchy the skin will be while preventing too much moisture loss in the meat.
What you will get is a magnificent nose-to-tail pork masterpiece that is irresistible to indulge in.
When you listen to the sound when the chef cuts through the crackling, you can already imagine how crunchy the skin would be. And it was surprisingly not too fatty.
The surprised is within, with packed densely with moist glutinous rice, sumptuous along with a slightly sweet taste.

Australian Lobster with Fruit Salad (Market Price, Advance Order Required)
A picturesque seafood dish that features Australian lobster meat prepared two ways – cooked in cheese, or served in little bowls made of fruit.
Presented on a bed of ice are 8 of these little fruit bowls around a mound of greens, topped with thin slices of horseradish.
With briny chunks of fresh lobster chunks and nutty, gooey cheese, this dish makes true indulgence.

Steamed Sliced ‘Soon Hock’ with Sichuan Pepper Sauce ($38++)
Soon Hock, a.k.a. Marbled Goby is a key ingredient in this specialty dish inspired from Chengdu, the capital city of Sichuan.
Its delicate-tasting fish meat has a fine texture that stands well to the steaming process.
Steamed with a fiery Sichuan pepper sauce that blends together chili bean paste, oyster sauce, red peppers, flour, sugar, garlic, sesame oil, and peppercorn oil, the soon hock remains sweet on a bed of soupy sauce which has partly absorbs all that hot and spicy goodness.

Double-boiled Abalone with Seafood, Sliced Ham and Cream of Pumpkin served in Mini Pumpkin ($28++)
A visually stunning presentation of an equally exquisite delicacy, an ode to the treasures of the sea.
This is a premium abalone dish that is double-boiled along with assorted chunks of seafood for that deep-sea flavour.
The mushroom-seafood medley is combined with sliced ham and made thick and creamy with pureed pumpkin.

Stir-fried Giant Sea Cucumber with Roast Pork, Mushroom and Vegetables (market price, good for 4-6 pax)
The luxurious sea cucumbers symbolise an abundance of wealth, so it is wise to add this to your festive table.
I have never seen such a big piece of sea cucumber, aptly named “giant”.
Poured over with specially-fried thick sauce, the piece was mostly springy with a bite on the outside, soft and gelatinous on most other parts.
Other TungLok Signatures recommended dishes include Steamed Barramundi Belly with Chinese Wine and Parley ($38++ per portion), and Stir-fried Homemade Fish Puff ($32++).
