Bakery Brera & Fine Foods – Molten & Rich Hojicha And Matcha Basque Burnt Cheese Cake

Bakery Brera & Fine Foods located near Empress Road Food Centre has gained quite a following for its artisanal breads and creative pastries. You can always expect something there.

So do not discount this as just another bakery at a HDB estate, because this is where hidden gems are to be found.

This bakery café churns out fresh European style breads and pastries daily, along with festive breads such as Panettone, Stollen, Galette Des Rois and Hot Cross Buns (since Easter is coming)

The best-selling items include Croissants (especially the Pain Au Chocolat), Baguettes, Sourdoughs, Ciabattas, and Sourdoughs.

There are a number of reasons why the croissants taste good.

The making uses a combination of two types of wheat flour – French and Japanese; plus the additional of French butter.

As for the doughs, they are fermented overnight and laminated with proper temperature each step.

Strict observance and precision control are applied, from temperature control, fermentation, proofing and baking to bring out the best of wheat aroma and butter flavour (so as not to over-caramelise the butter and the pastry.)

Therefore, you would find their Croissants to be golden crispy and fragrant buttery flavour.

If you find their Cruffins (which are a hybrid of croissants and muffins) familiar, that is because their bakes used to be found at The Alley Luxe at Cineleisure.

The real reason why I re-visited them this time was just one – Basque Burnt Cheesecake.

I had quite a number of Basque Burnt Cheesecake in Singapore, but Brera’s classic Basque Burnt Cheesecake ($7.30) has just the right amount of molten-ness and richness in terms of cheese.

My main qualms for most Burnt Cheesecake is that it is not soft enough in the middle, but the texture of this was meltingly soft and satisfying.

Okay, more exciting things. They have also just introduced Matcha and Hojicha Burnt Cheesecake, which I would anticipate should sell like hotcakes after news gets out.

While I thought that the Hojicha Burnt Cheesecake ($8.00) was a tad sweet because I was expecting the tea flavour to be more pronounced, there was still nuances of the tea that differentiated this out of the average.
