10 Wobbly Soufflé Pancakes & Japanese Pancakes In Singapore, Including A $4 One

Patience, patience, patience.

Soufflé Pancakes must be here to test Singaporeans’ patience, as we need to wait for 30 minutes (or much more) for a stack, and finish it up in 5 minutes.

What is the appeal of Souffle Pancakes?

They are all about the eggs and the beating/whipping, gently folded in the batter to keep the air bubbles within for that extra-fluffy texture.

These make them light and delicate, so much so that you feel guilt-free having these desserts. It is labour and time intensive to make them (and some cafes are restricted by the space, pans and staff they have), so be prepared to wait for your sweet treat.

Here are 10 places where you can find Souffle Pancakes and Japanese-style Pancakes in Singapore:

Flipper’s Pancakes Singapore

The famous Flipper’s Pancakes from Japan has opened in Singapore at Takashimaya Shopping Centre, Ngee Ann City.

Their Kiseki pancakes (well, most of them) are served in stacks of 3s, come with a wobbly soufflé-like texture, and with house-made maple-butter cream.

Diners in Singapore can come expecting 6 different soufflé pancake flavours.

They include the original Kiseki Pancake Plain ($16.80), Matcha Azuki ($20.80), Hazelnut Chocolate ($21.80), Millennial Strawberry ($20.80), Fresh Fruits ($21.80). And for a savoury option, there is the Benedict Pancake ($21.80).

So comparing this to say the average souffle pancake in Singapore, what makes that difference is that the milk, Kanagawa Hinata eggs, and Hokkaido Kitahonami wheat flour used are all imported from Japan.

Which would just give that added subtle ‘egginess’.

They were really light and not too sweet, so you wouldn’t feel guilty finishing one on your own. But 2 or 3 alone may have been too much for light eaters. Flipper’s Pancakes Singapore (Takashimaya)

You may have seen videos of Gram’s Pancakes which made their way around social media, of stacks of 3 pancakes being ‘shaken’ on plates.

Gram is famous for its 3-stacked “Premium Pancakes”, each 4 cm thick, served with syrup, butter and whipped cream.

In Singapore’s outlet, they are sold at $17.90 for the stack of three.

They are slow-cooked on low heat and whipped full of air, resulting in a fluffy texture which people say it is like cloud or cotton candy. Gram Cafe & Pancakes Singapore (Vivocity)

The pretty and dainty 40 seaters space is decked in a pink and white furnishing with hanging bespoke lighting.

A basic double-stacked Souffle Pancakes start from $8.80 that comes with honey butter, maple syrup and Chantilly cream.

They differentiate themselves from other soufflé pancake shop with the option to add toppings such as Coconut Sago ($0.80), Hazelnut Chocolate ($1.50), Gula Melaka Boba ($1.50) and Fruits ($2 – $2.80).

Apart from the Classic Souffle Pancakes ($8.80), 4 other flavours are available, namely Oolong Souffle Pancakes ($9.80), Strawberry Cheese Souffle Pancakes ($12.80), Hazelnut Chocolate Souffle Pancakes ($13.80) and Mango Passionfruit Souffle Pancakes ($14.80).

I found that the taste of the eggs was more prominent than the soufflé pancakes shops in Singapore, somewhat like a lighter and smaller version of a Castella Cake.

The addition of sliced strawberries, strawberries coulis and cream cheese in the case of the Strawberry Cheese Souffle Pancakes ($12.80) helped balance the taste with more tangy-fruitiness. Fluff Stack (Suntec City)

Mango Sticky Rice Soufflé ($16.90)? Sweeten up with a Thai-version of the Western soufflé, featuring thick yet fluffy pancakes served atop sweet sticky rice.

Beautifully garnished with ripe mango cubes, pomelo bits and dried rose petals, this dish is served with coconut cream for that lovely decadence.

This soufflé comes in a stack of three fluffy discs, making it an ideal dessert for sharing.

What was appealing was that obvious rose-floral scent just when the pancakes were delivered to the table.

Pour some of the coconut cream over the stack and sticky rice, and experience two-desserts-in-one: both the softness of the pancakes with Mango Sticky Rice.

But then, good things come to those who wait. You’d need to wait for at least 20-25 minutes (more during peak periods) to get your hands on this chef-recommended soufflé.

The pancake café is known for its meringue made-to-order mille-feuille (French for “thousand layers”) pancakes, included with homemade whipped Hokkaido cream, stacked from 2 to 8 layers.

Offerings include Strawberry and Mixed Berry Pancake, Mango Pancake, Grilled Apple with Homemade Caramel Pancake, Matcha with Rice Ball and Red Bean Pancake, and Chocolate with Grilled Banana Pancake, priced from $11.90 to $16.20.

I had the Chocolate and Grilled Banana Pancakes ($12.20 for 4 pieces, $16.20 for 8 pieces), topped with light torched bananas and chocolate sauce.

These pancakes were indeed moist and soft, with bananas blended into the batter, the interesting part was a half-cooked centre.

Ah, that warm, soft, fuzzy feeling.

Even though I added ice cream, I thought the scoop could be fuller as there was not enough chocolate sauce and nuts to go with the stack. Belle-Ville Pancake Café (100AM)

Walking On Sunshine or WOS, the newest beauty and dining hub in the block, is located at the 3rd floor of Orchard Central.

It is one of the biggest you can find in Singapore, juxtaposing a salon and a café in one location.
If you could just pick one item from the food menu, make it the Instagram-popular Soufflé Pancake ($20.50).

Imagine a stack of three light and fluffy pancakes topped with a special cream, nuts, and fresh fruits like berries, grapes and strawberries.

Good for sharing (or save all for yourself), this dish is loved by kids and adults alike.

Or have a savoury pancake for a change. The Crab and Kimchi Pancake ($20.50) is definitely on the other side of the flavour spectrum, but its spicy-sour taste is just as inviting.

Cafe De Nicole’s Flower at Telok Kurau (East Coast) is one cafe quite unlike others I have been to in Singapore which focuses on a garden-floral theme.

Soufflé Pancakes are also available here, available in three different flavours: Original ($15.90 – $19.90 depending on toppings), Matcha ($18.90) and Tiramisu ($18.90).

The Original Soufflé Pancakes ($19.90) comes with butter, syrup, cream, mixed berries (strawberry, blueberry, cranberry) and a scoop of coconut ice cream.

Waiting time can take up to 15 minutes to make the souffle pancakes and the service crew can be seen picking fresh flowers from the plants in their florist section to decorate the plate of dessert.

Even though the souffle pancakes may not seem as tall, wobbly or bouncy (worthy for a Boomerang shot), this plate of soufflé pancakes is a piece of art on its own, with sauces, fruits and flowers used for plating. Cafe De Nicole’s Flower (Telok Kurau Road)

The Japanese French Cafe is popular for its “hand-dripped” coffee and dessert soufflés

Hoshino Coffee offers their signature Pancakes Souffle Style priced $9.80 for single and $12.00 and double.

The soufflé was known to be soft and fluffy, freshly baked upon order, and therefore required a minimum of 20 minutes waiting time. 

The special matcha variant is at $13.50 for single and $16.80 for double, which I would recommend over the classic ones as it would be tastier with more going on.

Kyushu Pancake which used to be at Novena Regency, has reopened again at a different location – Holland Village.

The Kyushu Pancake Mix is made from 7 different finely selected grains including wheat from Oita Prefecture and Pressed barley from Saga Prefecture, 100% homegrown in Kyushu Japan, free of emulsifier, artificial fragrance, additives or processed starch.

Therefore, the texture may not be the usual wobbly-type that many Singaporeans are more used to.

I had the Hoji-cha Tiramisu Pancakes ($16.00), served with mascarpone cheese, hojicha sauce and jelly, with a side of vanilla ice cream.

Starting with the pancakes, it was soft and not too sweet (without adding the sauces and ice cream) – good for the palates of the health-conscious, though there was a certain denseness that perhaps some may find too filling after a few bites. Kyushu Pancake (Holland Village)

Oh wow. Souffle Pancakes in a hawker centre, and priced only at $4.

SweeT.Rex is a stall found at Alexandra Village Food Centre serving up Pancakes, Cheesecakes and Soft Milk Pudding. BUT the stall is currently opened for a couple of hours during the weekends.

Waiting time can be 30 minutes or longer. The tip is order here first, have your round of hawker delights and your pancake dessert would arrive about when you finish your meal.

Available at the Classic Souffle Pancakes with an ice cream top-up at an additional $1.

I enjoyed that it was indeed pillow-soft and not too sweet. I am nit-picking here, but if the chocolate sauce (and perhaps ice cream) was of a higher quality for more richness, it would have elevated the overall experience. But I know they are trying to keep prices low for consumers.
