Density Frozen Custard – Possibly Singapore’s First Frozen Custard Shop

Frozen custard? Not quite the yellow curdled cream, but a cold dessert very similar to ice cream. So you may ask: What’s the difference between custard, and ice cream, gelato, sorbet, soft serve or even froyo?

You may direct your question to Density Frozen Custard, probably the first of its kind in Singapore.

The concept originated from Mid-West USA from the early 1900s, when the Kohr brothers found that adding egg yolks to ice cream created a smoother texture, and helped it stay longer.

So Frozen Custard is/has
– Similar to ice cream, but with eggs added in addition to cream and sugar.
– Proteins in egg yolk act as a binding agent, used in place of gelatin and stabilisers, imparting a creamier texture.
– Egg yolk content is 1.4% minimum based on FDS Standard of Identity.
– Integrates as little air as possible, thus a ‘denser’ texture .
– Created in a continuous freezer.
– Neither flash-frozen not held at sub-zero temperatures, said to allow custard taste to come through.
– An overrun percentage similar to gelato.
– Prepared fresh on site.

As frozen custard has to be made fresh daily, you do not get a wide spectrum of flavours to choose from at Density.

The ice cream café provides up to three flavours per day: vanilla and something else, such as chocolate or Japanese green tea.

And I asked, yes, there would be no left-over frozen custard as they have to be cleared if not sold by the end of the day.

Prices were $4 for single scoop, $7 for double, $9.50 for triple, and $9 for a two scoop sundae with 2 toppings and sauce. Additional toppings were at a $1.

Verdict? The texture was true to its name ‘denser’, smooth and creamy, won’t feel like there is air or ice crystals ‘trapped’ within. It reminded me of a velvety version of thickened gelato.

Taste wise, I much preferred the Japanese green tea with a delicate lingering bitterness, compared to the vanilla which was way too sweet for me. Strange, because such preparation method would allow them to add less sugar, but I couldn’t get pass two teaspoons.

Located at Short Street between the popular Rochor Beancurd and Ramen Stall, Density faces tough competition in the frozen dessert department – Nookie’s across the road, and The Daily Scoop (SOTA), Yogart (Burlington Square), Merely (Sunshine Plaza), Cocoa Colony (The Cathay), and Milk Cow (The Cathay) are short distances away. The boss said, “I also know.”

I figure their challenge is to keep creating new flavours on a very regular basis, to attract the young (and possibly fickle) customer base who is indeed spoilt for choice.
