Tarte by Cheryl Koh – Les Amis’ Pastry Chef Helms Her Own

There was a little sense pride when I saw a local name fronting this pastry shop, other than the usual Japanese or French ones.

Les Amis’s very own Pastry Chef Cheryl Koh helms her own with Tarte by Cheryl Koh. The restaurant itself needs little introduction. It is after all considered one of Singapore’s Best Restaurants, ranking Number 13 in Asia’s 50 Best Restaurants 2015.

How the idea came about was there were several takeaway requests from guests who dine at Les Amis, and the team thought it was apt to expand the pastry section.

The takeaway outlet next to Caveau Bar sells just tarts and carolines for now, with tarts available in two seizes – 8cm ($8-$9) and 16cm ($30-$34).

Limited quantity, baked fresh every day, quality ingredients, good stuff.

Tarte’s bases are all baked by Chef Cheryl herself, who ensures that only the best available ingredients are used. The shop also incorporates the same quality ingredients Les Amis uses.

When I took a quick scan across the counter, I noticed that while the tarts were aesthetically pretty, they looked straight forward without the additional gimmicky decorations.

Rationale: Chef Chef does not like complicate recipes. She isn’t aiming to be super creative, just a simple goal to create classic desserts and hope that if someone thinks of the best chocolate tart or strawberry tart, hers will be top of mind.

I liked the Pistachio Tart ($9) made with toasted Iranian green pistachios, with smooth creamy pistachio filling, and not overly sweet. True enough, the buttery base was classic French, simple and firm, does not leave crumbs over as you bite into them.

Menu changes according to season. For example, French gariguette strawberries and Indian Alphonso mangoes used extensively right now. We predict that this will be a hit with tai-tais and others.
